Oatmeal Raisin Energy Bites

Need a quick and healthy snack that will satisfy your sweet tooth, fuel your workout or complete your kids lunch box meal?  These oatmeal raisin energy bites are my favorite snack to make because I can make a big batch, keep them in a the refrigerator and grab them as needed throughout the week.  My husband loves taking them to work to snack on during his 12 hour shifts to keep his energy up.

Oatmeal Raisin Energy Bites

  • 1½ C. rolled oats
  • ½ C. natural peanut butter
  • ½ C. raisins
  • ¼ C. honey
  • 1 tsp. cinnamon
  • 1 T. chia seeds
  • 1 tsp. vanilla
  1. In a bowl, combine peanut butter, honey, cinnamon and vanilla. Stir in oats, raisins and chia seeds.
  2. Use a tablespoon to measure out portions and roll into balls. (Makes about 15-18 balls.)
  3. Place in a container with a lid and keep refrigerated.

  1. the raisins add a the perfect sweetness and softer texture to the granola bite. i also add ground flaxseed to most of my energy bites. it has great nutritional value, but minimal taste or texture. aka- you can hide it in things and your hubby and kids will never know!
