It can be hard to find time during the week to make healthy meals, but with a little planning, you can throw together a meal for the family in no time. Make this crockpot chicken on Sunday and use it throughout the week to make chicken tacos, bbq chicken sandwiches or use it to add protein to a salad.
- ￼￼￼2 lbs. chicken breast
- 1 C. low-sodium chicken broth
- 1 small onion, sliced
- ¼ tsp. pepper
- ½ tsp. garlic powder
- Place all ingredients in the crockpot and cook on low for 4 hours.
- Remove chicken, place on cutting board and shred with two forks.
- Store the shredded chicken in the refrigerator and use for salads, tacos or other meals throughout the week.
