Smarter than Mom

Starting your day with a stack of pancakes equals the best day ever.  Or something close to that.  These little circles of happiness were made with 1/3 cup egg whites, 1/2 tsp cinnamon, 1 scoop plant-based protein powder and 1/4 cup blueberries.  Cook like a normal pancake, I usually take them off the griddle once the blueberries start to ooze.  Top with a diced strawberry and stack them high.  YUM!


The kiddos and I took a little field trip today.  I ordered a few things from Isagenix online and little did I know their headquarters is located right here in Chandler, AZ.  So instead of paying for shipping I was able to stop by and pick up my order.  How cool is that!?  It’s a pretty good sized building and of course I went in the wrong door.  The lady was very kind and told me exactly which direction to go for my pick-up.  Of course the kids didn’t let me hear the end of it.  Mollie kept asking “Mom, why don’t you know where you’re going?”.  She’s always telling me how smart she is because she is in school.  Next time I will just ask her for directions and I will never be lost again.  Problem solved. 😉


They had the brightest colored flowers outside the building.  All the plants and trees have been blooming like crazy here the last few weeks.  So pretty too look at but not so good for my allergies.  Claritin and Flonase are my best friends right now.  Get out the netty pot!  If you haven’t used one before I highly suggest doing so.


Today’s lunch consisted of some really tasty organic tofu with Moroccan spices (cinnamon, coriander, garlic & ginger) on top of spinach, baby arugula, yellow squash and cucumber.


Per Mollie’s request we went for a long walk tonight.  She wanted to go exploring for a park to play at.  We left the house right as the sun was setting.  That’s my favorite time of night because we walk to the west and watch the sun set behind the mountains.  Always amazing every single night with the incredible splash of colors across the desert sky.  Mollie walked a little bit at the beginning with her buddy, Tiger, around her neck.  The kids got a good 30 minutes of play time at the park we found along the way.


I don’t think I will ever get tired of looking at Palm trees here.  It makes me feel like I am on a tropical vacation.  This row of trees is always lit up every night.  Our walk turned into about 3 miles tonight.


In case you didn’t see it plastered all over my social media pages today (I was a little excited), I had my first post as a contributor on East Valley Moms Blog!  I have joined the contributor team and will be posting on their blog once a month for the next year.  These girls are all so talented and kind-hearted.  It’s going to be a good year for sure.
